Piece Information
The cut from the sirloin, slightly leaner than the topside, comes from the inner part of the sirloin. The muscles in this area are used for movement, resulting in leaner and less tender beef. Although pot roast and white roast have different textures, they can be cooked at the same time using the same method. The prepared version will show noticeable differences in texture and taste between them.
Being a lean cut, it is best suited for roasts, slow cooking, or pan frying/sautéing if thinly sliced.

Cooking Recommendations
- The fibers of this cut are arranged in different directions.
- When slicing, it is necessary to follow the grain, and it should be cut against it.
- For schnitzels, thin slices of approximately 0.5 cm will be cut.
- For roasting, the whole piece can be used or sliced to a thickness of 1 – 1.5 cm.
- It can also be cut for stew and ground beef.
