AMERICAN PACK contains 4 cuts of Premium Angus beef, produced and packed in the Karpaten Meat Group farm.
TOMAHAWK
Located under the front section of the spine, the tomahawk is essentially a ribeye cut with a specially cut bone, measuring at least 15 cm in length. The unique appearance of the cut resembles a Native American axe called a “tomahawk.” The Tomahawk is a highly marbled, exceptionally tender, and flavorful steak, containing the ribeye portion.
COWBOY
Cowboy steak is part of the ribeye cuts, originating from the front part of the spine. What sets it apart from a regular ribeye is the bone, which extends 5-6 cm beyond the meat. The thickness of the cut is determined by the width of the bone, making the meat quantity of this cut sufficient for 2 people. Cowboy steak has a high level of marbling that gives it a rich flavor, and due to the presence of the bone, this cut impresses with juiciness and tenderness during cooking.
BURGER
The beef work for burgers is composed as a mix of neck, brisket, chest, and shoulder. Their content is 100% natural, exclusively made with Angus beef and spices.
The burgers are delivered frozen. In the production process, immediately after meat slicing, the pieces undergo a quick-freezing process to ensure the preservation of all its properties, thanks to the rapid freezing speed and extremely low temperatures. The meat passes through the freezing tunnel within 24 hours, at a temperature between -32 and -36°C, and is then stored at a constant temperature of -18°C.
BRISKET
The brisket represents the lower part of the front quarter, bounded anteriorly by the neck and posteriorly by the flank. This muscle supports a significant portion of the animal’s body weight during movement. Originating from well-exercised areas of the moving animal, the meat is quite tough, with a significant amount of connective tissue.

Packing
➤ The cuts within the packages are dry aged, refrigerated/frozen, vacuum packed and arranged in cardboard boxes.
➤ During the shipping, the package is placed in a special refrigerated transport box, made of styrofoam, to ensure the integrity of the meat at a 0-3°C temperature,
➤ The styrofoam box is equipped with 2 cooling coils, above and below the meat box.
➤The cardboard box contains several holes to create cold air ventilation and ensure a constant temperature to the meat.
Storage Recommendations
➤ Refrigerated meat is stored at a maximum temperature of 4°C.
➤ Defrosting is done in the refrigerator, in the original packaging. It can take ~12-24h, depending on the size of the piece.
➤ The packaging should be removed from the refrigeration, 2 hours before cooking, and placed at room temperature.

Provenance and traceability - from the farm in Sibiu
From grass to beef, from farm to your plate!
Premium Angus beef is produced in Sibiu, in an area with a gastronomic story. The meat is naturally and wholesomely sourced from Angus cattle raised in a low-stress environment.
The superior quality of the beef starts from top Angus genetics and the development of its quality is pursued throughout the entire production process. Quality development is carried out from calving, nursing the calf by the mother, until 7-8 months, rearing in an extensive pasture system, natural fodder produced on our farm, for the winter period and carefully selected fodder recipes, for fattening, according to the principles of sustainable agriculture, that we wok by.
The specificity of Angus beef is given by the degree of marbling, tenderness, juiciness and taste. The local product comes from a fully controlled process of production, that creates a link between the cultural traditions of the area we work in, and the innovative system, resulting in a natural, healthy and tasty product.

How to cook the cuts
Cowboy Steak and Tomahawk are Ribeye (or Eye of the Rib), identical pieces of steak except that the Tomahawk has 7 inches of extra rib, is hollow bone that protruding into the extension of the piece of meat.
