SILVERSIDE WITH
MUSHROOMS SOUCE

Ingredients

1 kg silverside Angus

2 pieces of bell pepper

2 onions

garlic to taste

1kg of mushrooms (ideally mushrooms of forest or chanterelle mushrooms)

4 tablespoons curry paste

4 tablespoons soy sauce

thyme

salt and pepper

4 tablespoons oil

white wine

beef soup (boiled water)

liquid sour cream

butter

 

Preparation:

Heat the oil and roast the diced vegetables until they become glassy. Place the beef in a tray, add the roasted vegetables, all the spices to taste and place them in the oven.

Wash and slice the mushrooms, add half the amount of them with the beef in the tray covered with the lid. Let all bake in the oven for 10 minutes; then add 100 ml of white wine, beef soup (water) and leave in the oven for 40 minutes.

When the beef is cooked, remove it from the tray and keep it warm. Fry the rest of the mushrooms in butter for 5 minutes. Drain the sauce resulting from the cooking of the beef, adjust its consistency with flour mixed with butter, add the cream seasoned with salt and pepper. Add the mushrooms, boil for 2 minutes to smooth the taste and serve with the sliced beef silverside.

Serve with potato purée, rice garnish and salad.
