
ARROSTO DI VITELLO – ITALIAN STYLE ROAST BEEF
Arrosto di vitello – Italian style roast beef is one of the tastiest versions of roast beef.
Ingredients:
1 kg beef pulp
1 onion
1 medium celery
1 bell pepper
3 carrots
250 ml semi-dry white wine
sea salt
ground pepper
30 ml olive oil
30 g butter
➤Tips:
Before cooking the beef, it should be left at room temperature for about 2 hours.
Before cooking the meat in the oven, it should be roasted over high heat for a few minutes on all sides. During this time, avoid pricking the meat with a fork, it should be turned with a spatula or tongs.
For roast beef it is indicated to use sea salt and pepper. Other spices can be added as desired.
For this roast I used top side but you can also use the beef neck.
This recipe is one of the easiest beef roasts to prepare.
Celery gives a great taste to your roast, you shouldn’t give it up, no matter what other vegetables you choose to add.
➤ Preparation mode:
First heat the oil with the butter over high heat. Place sea salt mixed with pepper on a plate and toss the meat in this mixture. Fry the beef on each side over high heat for 2 minutes.
Remove the beef to a platter and sauté the diced vegetables in the same oil. Also over a high heat.
Put the beef in a yen dish and add the vegetables around it. Add the wine and cover the pot with the lid. If we don’t have a covered yena pot, we can cover it with aluminum foil.
Cook the roast beef in a preheated oven at 180 degrees, fan-assisted function of the electric oven, for 2 hours. In the meantime, be sure to turn the roast on all sides from time to time. Remove the lid and leave the meat in the oven for another 10 minutes to brown.
