ANGUS BEEF ROAST
IN THE OVEN

➤ Ingredients:
2 red onions
1.2 kg Angus beef roast
3 sprigs of thyme
500 g parsnips
2 tablespoons of canola oil/olive oil
1 tablespoon of mustard
1 teaspoon of honey

 

➤ Angus beef roast in the oven:
Preheat the oven to 200ºC. Meanwhile, cut the onion into large pieces and arrange it in a baking dish, placing the whole piece of beef on top, seasoned with salt and thyme. Place the dish in the oven for 20 minutes.

While the beef roast is cooking, boil the parsnips cut lengthwise in quarters for 5 minutes. Let them soften a bit, then drain the water. In a bowl, mix the oil with mustard, honey, and parsnips. Arrange all these around the beef in the baking dish and bake for 30-40 minutes (depending on how well-done you prefer the beef roast).

Remove the beef from the oven and let it cool in a warm place for 10 minutes, then slice and serve alongside parsnips.
