HOMEMADE BEEF SAUSAGE

➤Ingredients:
1 piece of Angus pulp ( top side, knuckle, silverside, eye of round) or 1 piece chuck roll
salt
garlic
aromatic herbs
50 g butter or animal fat
other spices of your choice

 

➤ Preparation mode
Season the meat and leave for at least an hour at room temperature to soak up the flavours. Heat the fat in the pan and fry the meat on each side (top, bottom, sides, ends). Cook until the crust is browned and seasoned. Depending on the size of the piece of meat, the process takes 1-3 minutes.

Place the piece of meat in a pot with a lid in the oven at 90° C (max. at 100° C) or on an indirect grill if you want to add smoking to the flavouring (see more about this technique HERE).

Depending on the size of the piece, it can take around 60 minutes to cook. When it is ready we leave it to rest minimally 15-20 minutes, in the pot or in foil if cooked on the grill (you can use a thermometer for meat).

During this time the juices in the meat redistribute and the muscle fibres relax, contributing to the tenderness of the meat.

 

After the meat has cooled, it can be sliced and used as breakfast sausage, sandwiches or salads.
The meat can be refrigerated for several days in foil or in a casserole dish.
