A five-star lunch. Angus beef brisket – slow cook- crispy crust, juicy, flavorful and very, very tender meat.

➤ Ingredients:
1.1 kg Angus beef brisket
50 g butter
3 tbsp olive oil
5 cloves garlic
BBQ sauce – about 50 ml
1 tbsp mustard
salt, pepper
cumin, thyme, rosemary, paprika, chilli flakes

➤ Method of preparation

Remove the meat from the refrigerator at least an hour beforehand to bring it to room temperature.
Put the butter and oil in a saucepan, then the garlic cloves and sprigs of thyme and rosemary. Then add the piece of meat and fry for about 5 minutes on all sides.
Then the meat is basted with BBQ sauce, mustard, spice mix and salt and placed in the oven. Bake uncovered and do not add fat or water.

The roast should be in the oven for 4 1/2 hours at 130 degrees Celsius.
When the roast is done remove from the oven and let rest for 20 minutes, then slice.

The sauce left in the pan after the cooking time is over is placed in a saucepan together with a glass of red wine and simmered for a few minutes.

For the garnish you can make a mashed potato and carrots caramelized with garlic.
