OSSOBUCO – THE ITALIAN BEEF STEW

This famous Italian stew is extraordinarily tasty and worth giving it a try!

➤Ingredients:
– 1 kg Osso bucco
– 50 gr butter
– 1 tbsp olive oil
– 2 large onions
– 3 cloves garlic, finely chopped
– 2 small carrots
– 200 ml white wine
– 250 ml beef or vegetable stock
– 1 tin of diced tomatoes
– 1 tsp salt
– ground black pepper, to taste
for sprinkling on top
– 2 tsp lemon zest
– 2 tablespoons chopped green parsley
– 1 clove garlic, minced

➤ Method of preparation:
For 6 servings put 50 g of butter and a teaspoon of oil in a cast iron pan.

Roll the meat pieces in flour and shake well. Fry them over medium-high heat. Fry on all sides until golden brown, 3-4 minutes per side. Remove and set aside in a covered dish.Chop 2 large onions and sauté in the remaining butter in the pan. Cover and cook for 10 minutes over low heat. Stir occasionally.
Peel and mince 2-3 cloves of garlic. Cut 2 small carrots into cubes. Add the carrots and garlic over the onions and mix well.
Place the meat on top. Put 200 ml white wine. Cover and cook over low heat for 10 minutes.Add a can of tomatoes and soup until the beef is almost covered. Approximately 250 ml soup (stock). Add 1 tsp salt and pepper to taste. Cover and cook for an hour and a half. Turn the meat every 15 minutes.
Traditionally, ossobuco is seasoned with the following mixture: 2 teaspoons lemon zest, 2 tablespoons chopped green parsley and 1 clove minced garlic. This mixture gives the specific taste to the food.
