RUMP STEAK WITH TAGLIATELLE
& SAUCE PESTO (VIDEO)
2 pieces of Premium Angus rump steak
1 bundle of parsley
3-4 fresh basil leaves
2-3 cloves of garlic crushed
100 g grated parmesan
Salt and pepper
In a pan, heat a little oil and roast the pieces of beef for 2 minutes on each side. Turn them on both sides twice. Before removing them from the pan, each piece of beef is lifted using a spatula for a few seconds, so that the edge of the beef slice is roasted. The Beef is left to rest for 10 minutes; afterwards it is sliced perpendicularly to the fibre.
Mix the pesto sauce together with herbs, oil, lemon juice, shredded parmesan, salt and pepper in the blender to form a homogeneous paste. Separately in a small bowl boil tagliatelle pasta in salted water. When they are ready, drain and mix with pesto sauce. Sprinkle the pasta and the strips of beef with grated parmesan cheese. The flavours in the dish will be well highlighted if served with red wine.
