As part of the roastbeef, the sirloin is found in the lumbar area of the spine and makes its way to the round; rich in intramuscular fat insertions, like ribeye, it is very suited for grilling.
Picanha is the upper muscular layer of the rump area, just below the skin; with few intramuscular fat insertions, but with a fine texture, picanha is less used during the movement of the animal, so it remains very tender; it is covered on the outside with a generous layer of fat, which must not be removed during cooking. It can be grilled, sliced along the fibre.
The boneless ribeye is extracted from the front of the spine, from the sixth rib to the twelfth rib, like the bone in ribeye, but it has the bony parts removed. It is aromatic and fragile, coming from the area of the upper thoracic box, with little muscles exercised in movement. Intense marbled, the ribeye is ideal for fast grilling over a high heat.
Located on the inside of the round, the knuckle has a round appearance, hence its name. It is one of the least used muscles in the movement of the animal and implicitly one of the tenderest parts of the round, with thinner muscle fibre, with quite a few connective tissues and with a special taste and juiciness.
All beef cuts are aged in a dry-age system for 21 days and individually vacuum-packed. The weight for each piece is approximate and can vary by +/- 5% but in total, the package will weigh at least 4 kg. The packages will be delivered in cardboard boxes and the refrigeration temperature during transport will be ensured by returnable refrigerated boxes.
Grilled – depending on how you want it (rare, medium or well done) put on a very hot grill for 3 to 5 minutes on each side. No spices are used for grilling before cooking.
In the pan – Add salt, pepper or other spices to the beef, add a little olive oil to the pan; when the oil is hot, add the premium beef, and when the meat juice begins to appear on the surface, the slice must be turned over.
The cooking time is around 8-10 minutes.
