TOMAHAWK STEAK ON THE GRILL WITH LEMON BUTTER AND HERBS
➤ Ingredients:
0.800 – 1 kg Tomahawk / Cowboy steak
Salt, pepper
For the flavored butter:
100 g soft butter
½ juice of lemon
2 crushed garlic cloves
2 tablespoons freshly chopped parsley
1 tablespoon freshly chopped thyme
1 tablespoon freshly chopped rosemary
½ tablespoon dried oregano

➤ Method of preparation Tomahawk / Cowboy steak grilled with lemon butter and herbs:
Bring the piece of Tomahawk or Cowboy steak to room temperature and remove excess juices from the surface of the meat with an absorbent paper towel. Season with salt and pepper and cook indirectly on the grill until the middle of the meat reaches 95-100°C.
In the meantime prepare the butter flavoured with lemon and herbs: bring the butter to room temperature and place in a bowl, add the lemon juice and finely chopped spices, mix well and leave at room temperature to serve.
When the meat has reached a temperature of 95-100°C in the middle, remove it from the grill, wrap it in aluminium foil and leave it to rest for 10 minutes, during which time we will heat the grill thoroughly and then grill the meat for 1-2 minutes on each side directly on the grill grate. Once the browned crust is formed, remove the steak from the grill, season with the flavoured butter.
Tomahawk or Cowboy steak can be served with a side of grilled vegetables: tomatoes, peppers, asparagus, onions, mushrooms.
