MEATBALLS SOUR SOUP

We invite you to cook a tasty and savoury parsnip soup with minced Angus beef and vegetables.

➤Ingredients:
For the soup:
1 onion
1 carrot
1 parsnip
1 kapia pepper
3-4 potatoes
100 g peas
3 tablespoons tomato paste
lemon juice or sour borsh

For the meatballs:
500 g minced Angus beef
1 onion
3-4 cloves of garlic
1/2 bunch dill
1 egg
Spices: salt, pepper, paprika, parsley, thyme.

➤How to prepare meatballs sour soup with beef:

First finely chop the onion, kapia pepper and grate the carrot and parsnip, then boil them in 2-3 litres of water. Leave them until the water starts to boil.

Add the tomato paste and cook for a further 10-15 minutes or until the vegetables are almost cooked.

Mix the minced meat with the grated onion and garlic, add 1 egg, chopped dill and seasonings: salt, pepper, paprika, parsley and dried thyme.

Put 50 ml vinegar and 50 ml oil in a deep dish. We run our hands through this mixture before making the meatballs and add them to the soup. After forming the meatballs, add them to the broth and simmer for 30-35 minutes.

When you have finished adding the meatballs, add the potatoes cut to size and the peas. Let the soup simmer until the meatballs are sufficiently cooked. Finally season with salt and add chopped green dill.

You can sour the soup with sour borsh or lemon juice to taste.
