GRILLED ROAST BEEF

Flat iron is a tender and tasty steak that can be grilled or pan-fried.

➤Ingredients:
500 g flat iron Angus
olive oil
salt and pepper

For corn and zucchini salad
1 zucchini
1 corn
200 g cherry tomatoes
juice of half a lemon
olive oil
parmesan cheese
fresh basil leaves
salt and pepper

For the dried tomato sauce
dried tomatoes in oil and herbs
oil from the tomatoes
2 cloves garlic
juice of 1/2 lemon
ground pepper

➤ Preparation method:
Remove the meat at room temperature. Wipe well with a paper towel, brush with olive oil on both sides and season with salt and pepper.

Heat the grill and place the steak on it. Grill for about 4-7 minutes on each side until it reaches the desired internal temperature. If you want it medium rare, when it has reached an internal temperature of 57°C take it off the grill and cover with foil for 10 minutes.

* cooking time may also depend on the thickness of the meat and the temperature of the grill.

How to prepare warm salad:
Slice the corn and zucchini and drizzle with olive oil, then place on a hot grill. Brown on all sides, then remove to a platter.

Remove the corn grains with a knife, add the zucchini slices, halved cherry tomatoes, lemon juice, salt, pepper and olive oil. Finally add strips of Parmesan cheese and fresh basil leaves.

How to prepare the dried tomato sauce:
Put the tomatoes in a chopper, add oil from the jar and top up with a little olive oil, garlic and lemon juice. Blend until you have a delicious sauce. Season with pepper or chilli flakes to taste.

After the steak has rested for 10 min, portion with a sharp knife into thin, even slices and place on a plate with the sundried tomato sauce and warm corn and zucchini salad.
