
PIE WITH BEEF CHEEKS AND MUSHROOMS IN PUFF PASTRY
If you haven’t used this beef before, beef cheeks are a tough, fibrous textured beef that can become tender and juicy if cooked correctly.
Beef has to be cooked over a long period of time, so it can form the basis of many dishes, soups, stews and even roasts.
Ingredients:
650 g Angus beef cheeks
70 g bacon
1 yellow onion
3 cloves garlic
150 ml red wine
100 ml water/soup
1 bay leaf
1 tsp dried thyme
1 tbsp oil
1 tbsp white flour
50 g butter
200 g mushrooms
800 g pastry dough
100 g grated Parmesan cheese
2 tablespoons caramelised onions
1 egg for the spread
salt and pepper
To serve
thick cream
yoghurt sauce
salad of your choice
Method of preparation:
Because it is a beef that requires long cooking to reach the desired tenderness, we will prepare this recipe in the multicooker on the pressure function. If you choose to cook it classically then the amount of water/soup and cooking time is increased until the beef is cooked.
Cut the beef cheeks into small cubes, chop the onion finely, cut the bacon into thin strips.
Fry the bacon in a tablespoon of oil. When browned, add the onion and pressed garlic and fry for 2-3 min.
Add the beef and continue sautéing for another 3-4 min, stirring all the time.
Put the wine, water/soup, salt and pepper, thyme, bay leaf over the beef, cover and set on high pressure for 50 min.
After the beef has become tender, add 25 g of butter and flour broken up with a little cold water. Cook on low for a few more minutes until the flour gives the sauce its consistency.
Sauté the diced mushrooms in 25 g butter until nicely browned, then stir into the beef mixture.
Allow to cool very well, then prepare the pies.
How to prepare beef cheek pies:
For the appetizer pies, cut the pastry dough into 10 cm circles. Place in muffin tins lined with paper and press gently so that they fit the moulds well. Place a spoonful of grated Parmesan cheese in each and then top with the beef and mushroom mixture.
Add a spoonful of caramelised onion on top of the beef then close with a circle of dough pressing the edges to seal.
Scratch the top to release the steam, brush with beaten egg and sprinkle with sesame.
Bake in a preheated oven at 180°C, fan function, for 30-35 min.
Eat them cold, they’re perfect for putting in your picnic basket or even for your school or work lunchbox. They’re hearty and very tasty.
