➤ Ingredients:

1 kg Angus topside

One handful of round yellow and green beans

1 yellow onion

1 roasting pimento

4 slices paprika

3 garlic cloves

Soy sauce

2 tablespoon honey

Pumpkin seeds

250 g flour

2 eggs and 1 yolk

1 tablespoon olive oil



➤ Preparation mode for Angus topside with homemade pasta:

First of all, prepare the dough mixing 2 eggs and 1 yolk with 250g flour; knead the dough by hand, until it hardens well enough and no longer sticks. Use for this recipe only 100g of dough; roll out the dough la 3-4 mm thick and cut them so that you get homemade pasta. Meanwhile prepare the vegetables: cut the roasting pimento julienne, chop the onion and slice the garlic cloves and the paprika and break the beans in half.


Slice the beef thinly against the fibre. Preheat 2 tablespoons of olive oil very well in the pan and stir-fry the beef slices in it for 2-3 minutes. Keep stirring until all sides are browned. When ready, season it with salt and pepper and remove it from the pan, in a bowl. Pour a little more oil in the same pan and stir-fry the onion, the green beans, the roasting pimento, the garlic and the paprika for 3 minutes, until they  soften a little and the onion becomes translucent; then season the vegetables with salt and pepper and remove them from the pan into the same bowl with the beef slices.


Put the pasta in salty boiling water and boil them for 3 minutes. For the sauce, take 3 ladles of water, pour them in the pan and dilute the fried rests on the edges of the pan, add 2 tablespoons of honey, the beef slices, the vegetables and the boiled pasta.  Mix everything very well and remove the pan from the fire.  In the end, add the roasted pumpkin seeds, after you have roasted them for 1 minute in advance.
