5 SAUCES FOR BEEF
1. Green Salsa:
Ready in 15 minutes, this spicy green Italian-inspired sauce for Angus beef does not require boiling. Preparation is simple: finely chop a bunch of parsley, chives, and fresh mint and mix them in a bowl with 1 teaspoon of capers, 2 or 3 anchovy fillets, 1 crushed garlic clove, juice from one lemon, and 3 tablespoons of olive oil. Mix well and season to taste.
2. Creamy Pepper Sauce:
Place 2 tablespoons of red wine balsamic vinegar in a deep non-stick pan and bring it to a boil. Add 150ml of chicken stock and reduce everything by half over high heat. Add 2 teaspoons of green peppercorns, crushing some of them slightly with the back of a wooden spoon. Season, bring back to a boil, add 4 tablespoons of heavy cream, mix well, and simmer over low heat for another 1-2 minutes until the mixture thickens a bit.
3. Quick Red Wine Sauce:
With this rich and slightly alcoholic sauce, opt for a classic bistro vibe. Pour 250ml of beef stock into a saucepan and reduce it by half. Add 125ml of red wine, 2 teaspoons of brown sugar, and 1 teaspoon of balsamic vinegar and let it simmer for another 10 minutes over high heat until the liquid is reduced by half. Season to taste and serve.
4. Mushroom Sauce:
No one would turn up their nose at a retro grilled mushroom sauce, but this creamy sauce is even more refined. Heat 1 tablespoon of olive oil in a pan and add 6 sliced cultivated mushrooms, sauté for 5 minutes until soft, then add a clove of garlic and 2 tablespoons of brandy and mix. Let it boil until the brandy evaporates, then add 4 tablespoons of heavy cream and 1 teaspoon of whole grain mustard. Let it simmer over low heat for another 2-3 minutes, season to taste, and serve.s
5. Cold Sauce:
In a large enough bowl, put 1 cup of corn kernels, ½ cup of diced and seedless tomatoes, ½ cup of diced seedless cucumbers, 3 tablespoons of finely chopped green onions, 2 teaspoons of apple cider vinegar, 2 teaspoons of olive oil, 1 teaspoon of sugar, 1/2 teaspoon of ground cumin, and ¼ teaspoon of salt. Mix all the ingredients well, cover, and refrigerate for at least 1 hour to allow the flavors to blend. Serve cold. If you use freshly roasted corn kernels, there is no need to add a teaspoon of sugar when preparing the sauce.
