SAUCES, MARINADES AND CONDIMENTS
What is the difference between barbecue sauce and marinade? What is each used for and at what stage of cooking? Both of them contain liquid and spices, but are used differently.
Don’t let the name fool you: barbecue sauce can be used either on the barbecue or on the grill and is used to season steaks towards the end or after they have been cooked and eaten with the meat.
Marinades are used to tenderise and flavour meats, vegetables or even fruit before they are grilled. The meat, vegetables or fruit soak in the marinade, absorb the flavours and some of the liquid, and discard the rest of the marinade.
While the meat marinates, it is kept cold for some time, depending on the recipe. Then remove from the refrigerator, bring to room temperature along with the sauce, remove from the marinade and place on the hot grill for a few minutes on each side to form the specific crust. This will keep the meat soft, juicy and aromatic inside.

When you decide to make a marinade or barbecue sauce, think about the kind of flavours you want to create. A very simple and sweet American-style barbecue sauce suits any occasion, it’s practical and quick; but maybe you want to create something special – then you can opt for a Caribbean-inspired marinade.
For a different, exotic grilled meat, you can also try a Thai marinade. Use lemongrass, chilli, garlic and ginger, or even simpler, try topping the meat with a green Thai curry paste mixed with a little coconut milk or yoghurt.
Salads often make all the difference when it comes to a grilled dish. A new potato salad with mayonnaise and garlic or a simple salad with white cabbage, carrots, onions and mayonnaise is sure to be appreciated. Add fresh bread, pickles and a selection of sauces.
Finally, don’t forget the vegetables. You can grill lots of vegetables.
