Roasting Beef – The Secret to Tender, Juicy, and Effortlessly Delicious Roasts
Follow these simple tips, and roast beef will soon become one of your favorite meals to prepare.
What Is Roast Beef?
Roasting is the process of cooking beef in the oven, using a roasting pan—with or without a roasting rack—until the outside develops a beautifully browned crust while the inside remains tender and juicy.
Avoid adding water to the roasting pan. Doing so creates steam instead of dry heat, preventing proper browning and resulting in meat that’s softer and less flavorful.
Roasting relies on three methods of heat transfer:
- Radiation: Heat from the oven walls browns the surface of the meat.
- Convection: Hot air circulates around the roast, cooking it evenly.
- Conduction: Heat travels from the browned exterior into the center of the meat.
How Much Beef Should You Buy?
As a general guideline, allow 500 g (about 1 lb) of beef for every two adults, and roughly half that amount for each child.
If you’re unsure, it’s always worth adding an extra 500 g (1 lb). Leftover roast beef is perfect for sandwiches, salads, wraps, or other meals later in the week.
Does Beef Become More Tender the Longer You Cook It?
Not always.
Some cuts become wonderfully tender when cooked slowly over a long period, while others become dry and tough if overcooked.
Cuts that contain a significant amount of connective tissue require long, gentle cooking to break down the collagen and become tender. By contrast, naturally tender, well-marbled cuts need much less cooking time to achieve the best texture.
The ideal cooking time always depends on the specific cut you’ve chosen.
How Long Should You Roast Beef?
Preheat your oven to 220°C (425°F).
Place the roast in the oven and cook for approximately 15 minutes to develop a flavorful crust. Then reduce the oven temperature to 190°C (375°F) and continue roasting according to your preferred level of doneness.
Approximate Roasting Times
- 13–15 minutes per 500 g (1 lb) – Rare
- 17–19 minutes per 500 g (1 lb) – Medium
- 22–25 minutes per 500 g (1 lb) – Well done
Cooking times are approximate and may vary depending on the cut, its shape, and your oven. For the most accurate results, use a meat thermometer.
How Do You Keep Roast Beef Juicy?
Roast the beef uncovered until it reaches your desired level of doneness.
Once removed from the oven, loosely cover it with aluminum foil and allow it to rest for at least 15 minutes before carving.
Resting gives the juices time to redistribute throughout the meat instead of running onto the cutting board, resulting in a roast that’s noticeably juicier and more flavorful.
Step-by-Step to the Perfect Roast
Roasting is one of the easiest and most rewarding ways to prepare beef, especially larger cuts.
While most roasts require several hours of cooking, the process itself is remarkably simple. With the right cut, proper roasting technique, and a little patience, you’ll be rewarded with exceptionally tender, succulent beef that’s perfect for both everyday family meals and special occasions.
