ANGUS TOPSIDE
SOUP

 Ingredients:
800 g Angus topside
1 big onion
2 carrots
1 parsnip
1 medium head of celery
1 parsley
1 big paprika
500 g green / yellow round bean pods
½ cabbage
½ cauliflower
500 ml tomato juice
500 ml tomato dice (optional)
the leaves of a celery stick
salt and pepper

Topside soup preparation:
Take the beef cut into pieces and place it in a pot with cold water and a little salt (to help remove the foam that will be removed as it forms).

Once the beef has been boiled, add the chopped onion and the chopped roots. Cover the pot with a lid and boil over until the beef is almost ready.

Then add the shredded cabbage, the pieces of cauliflower, the bean pods and the pepper. After about 15 minutes of boiling, add the tomato juice and the diced tomatoes, salt and pepper to taste. Finally add the celery leaves and close the fire. It takes another 10 minutes of patience to leave the pot covered with a lid, so that the beef soup can homogenise its flavours and perfect its taste.
