Rump

The rump is the beef cut with the highest degree of tenderness

 and marbling from the whole round area.

RUMP

It is a link between the thigh area and the sirloin, having a considerable layer of fat on its’ upper side.  It is a beef cut whose muscle is not so much in use while the animal is moving, hence the high level of tenderness.
