Piece Information

The beef schnitzel comes from veal sirloin, which includes the internal muscles of the thigh. Being a muscle that is highly used during movement, the sirloin cap has less intramuscular fat, and the texture of the muscle fibers is denser, but with a very pronounced taste. The muscles in this area are used for movement, resulting in leaner and less tender meat. Depending on the butchering method, well-calibrated pieces with various purposes can be obtained. For example, the middle part of the sirloin cap is excellent for schnitzels.

Cooking Recommendations

  • Remove the meat from the refrigerator half an hour before preparation. Season the meat with salt and pepper.
  • Coat each piece of meat in flour, ensuring it is evenly covered. Then, dip the meat in beaten eggs to make the breadcrumbs adhere. Completely cover the meat pieces with breadcrumbs.
  • Heat oil in a pan to the appropriate frying temperature (around 170-180°C).
  • Fry the meat pieces in the heated oil until they become golden and crispy on both sides. Make sure to flip them to cook evenly.
  • Place the pieces on an absorbent paper towel to remove excess oil.
  • Serve the veal schnitzel with lemon slices and side dishes such as french fries, mashed potatoes, or salad.
