Piece Information

It represents the lower part of the respective pulp and the leg area. The pieces are sliced and contain part of the tubular bone. Due to the tubular bone containing marrow, cooking the meat provides a strong and distinct taste compared to all other cuts. The fiber texture is very dense with low fat content. These cuts from the leg area are largely used for movement. As a result, it is commonly cut into cross-sectional sections called Shank Cross-Cuts, which are most commonly used for boiling, slow cooking, or oven cooking to create flavorful dishes. It can be cooked with the bone as it is sliced or deboned.

The specificity of Angus beef is given by the degree of marbling, tenderness, juiciness and taste. The local product comes from a fully controlled process of production, that creates a link between the cultural traditions of the area we work in, and the innovative system, resulting in a natural, healthy and tasty product.
