Goulash is made from beef, specifically from the knuckle part. Located on the inner part of the beef, the knuckle has a round appearance, hence its name. It is one of the least-used muscles in the animal’s movement, and consequently, one of the most tender parts of the beef, with finer muscle fibers, quite a few connective tissue insertions, and a distinctive taste and juiciness.

Season the goulash cubes with salt, pepper, and paprika. Brown the meat in oil until it becomes golden, add sautéed onions and garlic. Pour in beef broth or red wine and add additional spices. Let it simmer slowly for 1-2 hours. Adjust the taste with salt and pepper. Serve the delicious goulash with your choice of side dishes.
