ANGUS RUMP STEAK WITH WILD
MUSHROOMS SAUCE (VIDEO)
2 slices of Angus rump steak
500 g frozen wild mushrooms
3 medium onions
3 cloves of garlic
Salt and pepper
Dice the onions and cut in thin slices the garlic cloves. Take the rump steak and carve it into slices of approx. 1.5 cm thick; remove the outer layer of fat and cut it into large cubes. Sprinkle the beef slices with salt and pepper in abundance and rise on both sides in order to penetrate the aroma of spices.
Heat a drop of oil in a pan on the fire. Place the beef slices in the hot pan and lightly brown for 2-3 minutes on each side. Before turning the beef on the other side, add the cubes of fat removed from the edges of the rump steak. After the fat has melted and the beef has been roasted rare, place the beef on a plate and let rest.
➤ Hunter’s dressing:
In the remaining fat in the pan add the minced onion and garlic. When the onion becomes glassy, add a little bit of white wine and frozen wild mushrooms. Stir the ingredients well, season with bay leaves and finally add a little white flour and water. Place the slices in the sauce for another 1 minute.
The beef is carved into thin slices against the fibre and mixed with wild mushrooms sauce. You can trim with chopped red pepper.
